Naturally Gluten Free Peanut Butter Cookies

One of my most popular offerings is a naturally gluten free cookie! I've had several people say to me, "My mom/grandma made cookies just like these but I've never found a similar recipe!" I actually got this recipe from my late grandmother. I started perfecting this recipe when I was a young teen. 

It's extremely easy. I always double the recipe because it's easier for me to remember. 
1 jar of peanut butter
2 cups of sugar (I sometimes add a third)
2 regular sized eggs 

I add all the ingredients together and mix it. If it isn't quite a cookie dough consistency I add 1/2 a cup of sugar at a time until I can roll it easily in my hands. 

Next you will want a cookie sheet and parchment paper. Roll the dough and set on the tray. Take a fork and made a criss-cross pattern and flatten the cookie. 

Cook at 300 F⁰ until it's done cooking. This can take about 10 minutes. 

These cookies are always a hit. I have sold out at many events and I put them up for auction for a couple events for our youth group.
