Muffin Base Recipe and Variations

One of the first things I started experimenting with was muffins! I will link the base recipe I was using and then add the variations I did!  Namaste Muffin Recipe I would make several variations of muffins from this recipe!  If I wanted to use frozen fruit, I would add extra flour until it was thick. Thicker than cake batter but looser than cookie dough. That way when the ice melted off the blueberries it wouldn't be too wet.  Mint Chocolate Chip Muffins: Add 2-3 teaspoons of mint Mini chocolate chips (1-2 cups) Green food coloring (optional) Peanut Butter Chocolate Muffins: 1/3 cup of cocoa  About 1/4-1/2 cup of peanut butter Lemon Blueberry Muffins  About 1 cup of blueberries Lemon zest 1-2 tablespoons of lemon extract  Double Chocolate Chip Muffins  1/4 cup of cocoa  1 cup of chocolate chips  Blueberry Muffins: About 1 cup of blueberries  With the Namaste recipe, you need to watch the texture. Naturally Gluten Free Peanut Butter Cookies

One of my most popular offerings is a naturally gluten free cookie! I've had several people say to me, "My mom/grandma made cookies just like these but I've never found a similar recipe!" I actually got this recipe from my late grandmother. I started perfecting this recipe when I was a young teen.  It's extremely easy. I always double the recipe because it's easier for me to remember.  1 jar of peanut butter 2 cups of sugar (I sometimes add a third) 2 regular sized eggs  I add all the ingredients together and mix it. If it isn't quite a cookie dough consistency I add 1/2 a cup of sugar at a time until I can roll it easily in my hands.  Next you will want a cookie sheet and parchment paper. Roll the dough and set on the tray. Take a fork and made a criss-cross pattern and flatten the cookie.  Cook at 300 F⁰ until it's done cooking. Reasons for Gluten Free Eating!

 Welcome to my blog! My name is Samantha and I am the owner of a cottage bakery that specializes in GF baked goods.  There can be many reasons for someone wanting to eat gluten free. My brother who was allergic to wheat (among many other things) avoided gluten all together until he was retested recently. Back then (19 years ago) it was very difficult to find any gluten free items. Especially not cheaply.  My husband is another example. He has celiac disease and can't have gluten at all. He was diagnosed very young. (Around 5 or 6 years of age.) Because of my brother and my husband, I have become very good at cooking gluten free meals.  Sometimes eating gluten free can also be a dietary preference.  My blog will be a recipe blog and advice blog.
